Yesterday I had leftover veggie lasagna for lunch, for dinner I made veggie pad thai and a cucumber/carrot salad with an improvised dressing (garlic, onion, soy sauce, sugar, lime juice, coriander, chopped peanuts)
Last night I made some hummus and tabbouleh, so I'll have the tabbouleh for lunch, and make a sandwich with the hummus, multigrain bread, tomato and cucumber... maybe some grated carrot in there, too
Wouter's got his usual lunch: caesar salad, a sandwich (lettuce, tomato, cucumber, boiled egg, cheese, mayo) and a banana
I think tonight's dinner is leftover pad thai - easy enough!

Today for lunch my Algerian colleague bought in delicious home made cous cous with carrots, courgettes, chickpeas & beans in a sauce - yum.

it's a swirly weaved line type pattern (not actually celtic knotwork, but the same kind of idea) and it f**king hurt.

Although he could have given me better eye sight, less sticky out ears and a larger... anyways I am just aboot to tuck into a Serano ham sandwich with a Kiwi fruit and an apple for good measure.

Ooh sounds interesting Ellie! I've been wanting something on my back for a while, in fact Tam designed me a lovely one but I just haven't got round to it
Let's see some pix when it's healed!!
For lunch today I had beans on toast. Not massively appropriate food for the 1st June you would've thought but considering it's grey and rainy outside it was actually quite nice!
